UNIÓN UNO JOVEN
Pedro Hernández creates this Mezcal in San Baltazar, Oaxaca. He uses Agave Angustifolia (Espadín) and Agave Karwinskii (Cirial) which grew for 8 to 14 years.
After cooking the Agaves they are ground with a circular stone mill (tahona) by a horse or a mule. The juices and the agave bagasso (the fibre of the agaves) are then placed into wooden barrels. Here´s where theyre mixed with water and left to ferment for 4-7 days. The fermented juices and the agave bagasso are transfered to a copper pot where they are distilled. Every bottle of Mezcal UNIÓN is hand-bottled and hand-labeled.
Nose: sweet, fruity, smoked, herbal, wet soil and wood
Taste: sweet and fruity notes, oak tree fire, earth, herbal and citrus notes
