Mezcalero Edgar Angeles Careño creates this Mezcal in Santa Catarina Minas, Ocotlan, Oaxaca, Mexico. He uses 100 % Agave Angustfolia (Espadin) for this Mezcal.
Pechuga is a special Mezcal which is only offered at weddings, babtism or funerals. For its production, a double-distilled mezcal undergoes a third distillation, co-distilling fruit and spices while in the upper part of the Still a raw chicken breast hangs. The flavors of the ingredients are absorbed by the liquid, while the meat adds a silky texture and balances the different flavors. While the exact recipe for this special distillate is a family secret, it features banana, almond, pineapple, raisins and wild apple.
